Tomato Sandwiches are a Southern favorite. Although each person you ask has their own version.
My less healthy version looks like this – Merita white bread (untoasted) sliced tomatoes, Duke’s mayonnaise, kosher salt and white pepper.
My “healthy” version uses Whole Grain Bread (toasted), sliced tomatoes, Duke’s mayonnaise, avocado, thinly sliced vidalia onions, salt and white pepper. A summer Southern must – no matter how you spread the mayo! On the topic of mayo – there are very few actual southerners that would use anything besides Duke’s. The transplants struggle but we still love you just don’t make my tomato sandwich!
Summer is a bounty filled season. Laundry seems to replicate itself daily in a way that I am convinced someone else must be dropping theirs off. Rising Water bills directly correlated to the number of showers your children take in a day. Free time makes for six meals a day verses two during the school year.
One more thing if you frequent the low country. You must try Natural Blonde in your bloody mary made from local yellow tomatoes – honestly heavenly!
