Squash seems to have the most variation of definitions to date, but my favorite has to be the vegetable itself!

I love the old-fashioned, southern squash casserole, but usually only justify the calorie intake at Thanksgiving. One of my long-time friends makes her family recipe and brings it to our Thanksgiving meal, and always makes a second casserole for our family to keep as leftovers, we can’t get enough!

During the rest of the year, I do a lighter version with sliced onions, olive oil, grated parmesan cheese, and any white wine I have laying around. If you are interested in the full recipe please comment below or send me a message and I would love to share!

 

 

I like sautéed squash too – I caramelize onions and then sauté the squash, you can use olive oil or vegetable oil, but butter is always better!

Bruce recently made a flatbread with roasted summer squash, ricotta, and manchego cheese as a passed hors d’oeuvre which was delish!

 

 

I guess some people consider squash as a verb of their dreams and ambitions that have been crushed. I prefer to think of it as a temporary weight on your ambitions that makes the climb a little harder, but certainly not completely unattainable.

  1. Would LOVE your recipe for squash. I adore my mother’s recipe but it is a special occasion calorie laden treat!
    Hope your daughter’s recovery goes well. I hope they warned you that she will feel better then worse when the scab comes off the wound in her throat.
